It's 100% Chardonnay from 50 year old vines. planted in two outstanding and complimentary organically farmed lieux-dits in Les Mesnil-sur-Oger Grand Cru. It is 70% from Les Chétillons and 30% Mussettes (borders Chétillons to the south).
It is fermented and aged in stainless steel with no malo, then aged for 104 time consuming and expensive months on the lees and finished with a scant 2gl dosage.
Lemon curd, mild toasty brioche, citrus, quince, green apple, and ride on the mousse and waft from the glass. Twelve years old, super fine bubbles, seamless, complex and simply outstanding! Perhaps not exactly inexpensive, but it is nevertheless an outstanding value given its over-acheiveing quality."
