In 1991, Marie and Thierry Germain shared this "love at first sight" for the Domaine des Roches Neuves. Their philosophy, resolutely focused on living things, leads them to create a direct link with the vine, its soil and the animals that nourish the land.
Thierry is a pioneer of biodynamics in the Loire Valley, with great experience and wisdom acquired under the tutelage of Clos Rougeard’s Charly Foucault. Listening and observing his plants, allowing them to guide him, revolutionized his way of thinking. With incredibly pristine, vivid fruit along with a deep, rich structure and silky-fine tannins, Germain’s reds are grand examples of the heights biodynamic wines can achieve.
“La Marginale” is only produced in excellent vintages, much like vintage Champagne. The vines are 50 years in age and planted on clay and limestone soils. The fruit is completely destemmed, offering a fresher and softer mouthfeel experience. This Cabernet Franc is a perfect example of their skill and the magnificent terroir that they work with. It begins with a powerful fruitiness. Tart notes of blackcurrant and blackberry slowly subside to reveal hints of flowers and baking spice. The finish is long, leaving the mouth coated in fine tannins.
Pairing: Braised oxtail, blood pudding, Gorgonzola stuffed burgers, or roasted root vegetables drizzled with balsamic glaze. We recommend decanting for at least 30 minutes before enjoying.
