Varietal: 100% Verdejo
Location: Santiuste de San Juan Bautista, Codorniz, Aldeanueva del Codonal, and Rueda — all located in the province of Segovia, in the southeastern-most subzone of D.O. Rueda. This is the highest altitude zone, with poor sandy soils that resisted phylloxera. One vineyard site is planted within the Rueda zone.
Winemaking: Grapes are sorted and destemmed before being pressed in a pneumatic press. The must is clarified by cold settling in stainless steel tanks for 24–48 hours at temperatures between 6–10°C. Once clean, the juice is transferred to 500L and 600L French oak puncheons and demi-muids (purchased between 2016 and 2020) for fermentation. Primary fermentation lasts approximately 6–10 days.
Aging: Aged on the lees with bâtonnage for a minimum of 5 months in French oak puncheons and demi-muids (500–600L barrels).
