Jean Et Sebastien Dauvissat Chablis Saint-Pierre 2023

Lovely saline notes, mineral laden with ripe stone fruits, amplified in the warmish vintage, and a very subtle nuttiness combine to make this a beautful mid-weight white that’s perfect with scallops, lobster, meaty fish, ripe, soft cheeses and more. To make great Chablis, first you have to create the world. Well that may be taking it back a little too far, but you do have to go back over 150 million years ago when an ancient shallow sea created a seafloor composed of carbonate deposits, mixed with clay and other soils that eroded from the surrounding landmass and settled at the bottom of the lake. This amazing geological history is now the place where the vines of the Chablis region have their roots. Rocky limestone/clay soils are strewn with small exogyra virgula oyster fossils, bringing pure minerality to the region’s unique expression of Chardonnay. The cool northern climate brings crisp, mouthwatering acidity and nerve, and the result is one of the world’s greatest white wines! It is here that father and son and Sébastien Dauvissat continue a tradition of winemaking that dates back to the late 1800s. The wines are carefully crafted in cellars located under their 17th century family farmhouse. Their “Saint Pierre” village level cuvée is from a two hectare parcel of vines. The vines are in an excellent terroir on the back side of their Premier Cru vines, and soil here has a high percentage of limestone imparting supercharged minerality to the wine.
